Christmas recipe ideas from Mademoiselle Poirot: Split Pea Purée with pancetta, red onions and kale

In the run up to Christmas, leading interiors design agency Homestyle PR has joined forces with renowned food and style blogger Mademoiselle Poirot to bring you some delicious recipe ideas to get your tastebuds going in anticipation of the season of indulgence which is about to commence!  This first one from Carole promises to be a mouthwateringly wholesome appetiser or snack for chilly winter days…a feast for the eyes and the soul!

Mademoiselle Poirot's Split Pea Purée with pancetta, red onions and kale

Prep: 10 minutes

Cook: 1 hour

Finish: 10 minutes

Serves: 3-4

Ingredients:

For the purée:

  • 500g dried yellow split peas
  • 1200ml water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1tsp thyme leaves
  • 50ml extra virgin olive oil
  • salt and pepper to taste

For the topping:

  • 2 medium red onions, sliced
  • 250g pancetta
  • 250g kale leaves, chopped, stalks removed
  • olive oil for drizzling
  • parmesan for grating

How it’s done:

  • put the dried peas, water, chopped onion, minced garlic, thyme and olive oil into a large saucepan and bring to the boil
  • as soon as it’s boiling, turn the heat down and simmer for 1 hour until all the water is absorbed
  • transfer the peas to a food processor and mix until you have a smooth purée
  • season with salt and pepper to taste
  • the purée will be very hot, so should keep until serving. If in doubt, return it to the saucepan and keep it warm over a very low heat, stirring on a regular basis
  • put the pancetta into a frying pan over a medium heat
  • add the onions and kale
  • if needed, add a little olive oil
  • fry all until the onions are tender and the pancetta and kale are slightly crispy
  • serve the purée in individual bowls, topped with the pancetta & kale
  • top with a drizzle of olive oil and a grating of parmesan
